INGREDIENTS:

12 slices of lime*, cut thin
*Limes can be subbed our for any citrus fruit.
12 tbsp of sugar
PREPARATION:
Step 1
Preheat oven to your dehydration setting (or 160 degrees if you do not have a dehydration setting). Line a baking pan with parchment paper, and cover both sides of each slice of lime with 1 tbsp of sugar. Place limes on the parchment paper; be sure they do not overlap.
Step 2
Place a piece of parchment paper over the limes and another baking tray, like a tray sandwich. Bake in the oven for 1 hour.
Step 3
After 1 hour, remove the top tray and top layer of parchment. Place the tray of limes back into the oven for another 6 to 9 hours.
Step 4
You will know when they are done when the limes have no liquid around them and have a slight shine from the sugar. Place on a wire rack and cool to room temp before serving. Or they can be stored in an Air tight container in the fridge for up to 2 weeks.
